Pumpkin is the taste of the season. After all, it’s no coincidence that Starbucks’ Pumpkin Spice lattes make it onto every social media page during autumn. But why limit yourself to pumpkin-flavored coffee when there are so many other ways to enjoy the flavor?

3 Must-Try Pumpkin Spice Inspired Recipes

1. Pumpkin Spice Popcorn.  Popcorn is probably one of the most underrated snacks, especially for broke college students.  But only if you buy the traditional kernel kind that’s designed to be cooked on the stovetop or with a popcorn maker. Bought and prepared this way, it’s an incredibly cheap snack that’s full of whole grains, fiber, and antioxidants.

For pumpkin & spice popcorn, begin by popping 1/4 cup kernels on the stove or popcorn maker (use a covered pan and your favorite oil; if in doubt, follow the label’s instructions). In a separate bowl, mix 1 tablespoon coconut oil, 1 tablespoon brown sugar, and 1/2 teaspoon of pumpkin pie spice. Combine popcorn and mixture and enjoy!

2. No Bake Pumpkin Energy Bites.  No bake pumpkin bites are another healthy and finger-friendly snack ideal for busy college students. This is our favorite recipe, thanks to it having a number of helpful substitutions, and it happily takes a mere 10 minutes of food prep. With it, you can make as much as 25 tasty pumpkin and oat snack balls that are perfect on-the-go snacks. Pack them with your books and use them as an extra energy boost between
classes or post-workout.

3. Pumpkin Muffins.  The above pumpkin & spice popcorn and pumpkin energy bites for their simplicity, but nothing quite beats the taste of muffins fresh from the oven. Especially when those holiday-oriented muffins fill the entire cooking area with delicious pumpkin and spice smells. Who needs candles when you can make the real thing?
